Delicate and mildly sweet

Papaya varieties (there are 50) include Sunrise, a non-genetically modified fruit with bright-orange flesh and floral scent.

Taste: Delicate and mildly sweet.

How to eat: Slice in half lengthwise. Scrape seeds with a spoon, score flesh, and scoop. For a special treat, add a drizzle of lime juice and sprinkle with diced mint. Edible seeds taste of horseradish and are used in salad dressing.

Selecting: Ripe fruit has deep yellow skin. They should give slightly to pressure but are not soft at the stem-end.

Storing: Stored in the refrigerator, papayas will keep for up to one week, but it’s best to eat within two days.

Season: Year-round.
