Owners, Josh Tamaoka, and, Brandon Baptiste, grew up in Wailua.
Brandon left family and friends to attend the Culinary Institute of America, then worked for Thomas Keller at Per Se in New York and French Laundry in California.
When he returned home, the two friends opened Wailua Shave Ice.
Brandon’s culinary expertise shows up in house-made sauces and foams. Coconut x Coconut x Coconut includes coconut milk with haupia foam and toasted coconut flakes.
Local oranges are juiced, along with fresh pineapple, and drizzled over the Wailua Sunrise, before it’s toped with fresh oranges and pineapple.
